Up to 10 million pounds of shrimp are harvested in Georgia every year. We may be enjoying another delicacy from the sea soon as steps are being taken to begin harvesting oysters.
Oyster harvesting has been legal in Georgia since 2019. Thomas Bliss, director of the Shellfish Research Lab, has been using state grant money to test how well oysters could grow in cages along the coast where river marshes and tides are favorable for producing the beloved bivalves.
The state has issued leases for farming oysters. The leaseholders are ready to start and are waiting for federal approval to begin.
